I hope you all enjoyed winter break, I know I sure did! I love the holidays and the food that comes with them, but I couldn’t wait for the new year. Last year I didn’t meet a few of my goals in regards to my health and fitness routines. The last few months of 2014 brought a loss our family wasn’t prepared for and sickness that my family just couldn’t seem to shake. Thankfully we are healing from both our loss and our sicknesses, and we were ready to start the new year off right. My overall focus for 2015 is “New Year, New You”, and Bigelow Tea and Truvia are helping me usher in this idea with my first recipe of the year!

If you know me, you know that breakfast is my favorite meal of the day. With that in mind, I decided to share this Truvia Apple Almond Breakfast Cookies recipe. Breakfast cookies are easy to make, and freeze well, which makes them perfect for the morning rush. I made a batch of these yesterday and my kids popped them in the microwave this morning before they caught the bus.

Truvia Apple Almond Breakfast Cookies:

Oatmeal recipes are great because they provide the nutrition you need and they are wonderfully filling. To cut the sugar that you would find in normal breakfast cookies I used Truvia Baking Blend, which contains 75% fewer calories per serving when compared to sugar. I love Truvia, but had never tried the baking blend before. I think it actually turned out better than my baked oatmeal normally does, so I will probably stick with this blend for baking because a) no one noticed a difference in taste and b) cutting breakfast calories for the kids is my top concern this year. If you haven’t taken a look at how much sugar kids are consuming before going to school each day, now is the time to do that. I was shocked when I figured out that most of the sugar my kids consume each day comes from their first meal of the day!

 Apple Almond Breakfast Cookies Ingredients:

  • 2 cups unsweetened applesauce
  • 2/3 cup coconut oil, melted
  • 2/3 cup Truvia Baking Blend
  • 1 large apple, chopped
  • 2 cup old fashioned oats
  • 1 1/2 cup whole wheat flour
  • 1 cup chopped almond
  • 1 teaspoon baking powder
  • 2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

How To Make Apple Almond Breakfast Cookies:

  1. Preheat oven to 350 degrees.
  2. Spray a cookie sheet with Pam Coconut Oil Spray.
  3. In a large bowl, mix together the applesauce, coconut oil, Truvia and chopped apple. Mix well.
  4. Then stir in oats, flour, baking powder, cinnamon and the salt, and almonds.
  5. Scoop the batter onto the cookie sheet using a medium round scoop, mine broke so I used an ice cream scoop)
  6. Bake for about 10-13 minutes.
  7. Cookies will be soft and cake like. (for firmer cookies skip the apple chunks). Freeze after cooling completely.

I love to craft things that keep me motivated. If I can “see” it, I can do it! That’s why I also used my new Cricut (thanks mom) to create these super cute mugs. I know that the only way I will reach my goals this year, is to Dream Big, and Think Big! So that’s what I plan to do! I think they turned out super cute!

While I don’t generally eat sugary breakfast foods often, my bigger concern for myself is drinking my calories. I usually drink coffee and lots of it. While coffee isn’t horrible by itself, it can quickly become a dessert drink in my home. With the cream and sugar I use, I could just skip the coffee and eat some cotton candy!
