It’s almost FALL! I adore fall, don’t you? The humidity starts to die down; the leaves begin to change, and there’s a crisp, clean feeling in the air. The kids have been back to school for almost two weeks now, and I feel like I am finally getting back into a routine. It has been nice to have some time to myself. While my day is mostly spent working, it’s nice to be able to work without interruptions and the dreaded mom guilt. With Fall in mind, I wanted to share a pairing that may seem a like a little much, but I promise you, it’s “just right”!

White Chocolate Pumpkin Latte Cookies Recipe:
White Chocolate Pumpkin Latte Cookies Ingredients:
2 cups all-purpose flour
Two teaspoons fresh coffee grounds
One teaspoon baking soda
One teaspoon salt
One stick of butter
1/2 cup brown sugar
3/4 cup granulated sugar
3/4 cup LIBBY’S® 100% Pure Pumpkin (not pie filling)
1 1/2 teaspoons vanilla extract
One large egg
1 cup (6oz) NESTLÉ® TOLL HOUSE® Premier White Morsels
How To Make White Chocolate Pumpkin Latte Cookies:
Step 1: Preheat the oven to 375
Step 2: Pour flour, coffee grounds, baking soda, and salt into a bowl and combine.
Step 3: Using an electric mixer beat butter, brown sugar, and granulated sugar until blended. Then slowly add pumpkin puree, egg, and vanilla until it’s mixed well.
Step 4: Stir in your flour mix (lowest Kitchen Aid setting) until you have a soft cookie dough.
Step 5: Fold in NESTLÉ® TOLL HOUSE® Premier White Morsels
Step 6: Drop cookies on a baking sheet and bake for 10 – 12 minutes.
Pumpkin Spice Cookie Dip
Ingredients:
2 cups powdered sugar
3/4 teaspoon pumpkin spice
6 ounces cream cheese
Four tablespoons butter
1/4 cup LIBBY’S® 100% Pure Pumpkin (not pie filling)
How You Make It:
Step 1: Place all ingredients (except powdered sugar) in a mixing bowl and begin to mix on low. Slowly add powdered sugar until completely combined.
Step 2: Spread on Chocolate Pumpkin Spice Latte Cookies or use as a dip! Keep refrigerated.

OH MY! These look amazing! Pumpkin Spice everything please! That dip! I made something like it for Jonah's first birthday and we dipped apples in it. IT was so good I need to make this again!
