Turkey Spectacular Recipe

Thanksgiving was always the time when my Mamaw would make her Chicken Spectacular and this year I’m making Turkey Spectacular. She would even omit the onions because she knew I didn’t like them in it. This will be our first Thanksgiving without her, and she will truly be missed. To pay tribute to Mamaw, I am going to turn turkey leftovers into “Turkey” Spectacular. This dish couldn’t be easier, and it uses a lot of the ingredients that have been on sale this week at the grocery stores.

Turkey Spectacular Recipe:

Turkey Spectacular

Turkey Spectacular Ingredients:

2 tablespoons butter
1 medium onion, diced
3 cups turkey, diced (or chicken)
2 (14.5 oz) cans French-style green beans, drained
1 (8 oz) can sliced water chestnuts, drained and chopped
1 (10 3/4 oz) can Cream of Celery soup (or whatever kind you have on hand)
1 cup mayonnaise
1 (6 oz.) box Long Grain Wild Rice, cooked according to package directions

How To Make Turkey Spectacular:

Preheat oven to 350 degrees.

Heat butter in a small skillet over medium heat. Add onion and saute until translucent, about 5 minutes. Remove from heat and transfer to a large bowl.

Add all remaining ingredients to the bowl and mix until thoroughly combined.

Pour into a greased 3-quart casserole dish. Bake for 20-25 minutes or until bubbly. Let stand a few minutes before serving.
