Thanksgiving was always the time when my Mamaw would make her Chicken Spectacular and this year I'm making Turkey Spectacular. She would even omit the onions because she knew I didn't like them in it. This will be our first Thanksgiving without her, and she will truly be missed. To pay tribute to Mamaw, I am going to turn turkey leftovers into "Turkey" Spectacular. This dish couldn't be easier, and it uses a lot of the ingredients that have been on sale this week at the grocery stores.
Turkey Spectacular Recipe:
Turkey Spectacular Ingredients:
2 tablespoons butter
1 medium onion, diced
3 cups turkey, diced (or chicken)
2 (14.5 oz) cans French-style green beans, drained
1 (8 oz) can sliced water chestnuts, drained and chopped
1 (10 3/4 oz) can Cream of Celery soup (or whatever kind you have on hand)
1 cup mayonnaise
1 (6 oz.) box Long Grain Wild Rice, cooked according to package directions
How To Make Turkey Spectacular:
Preheat oven to 350 degrees.
Heat butter in a small skillet over medium heat. Add onion and saute until translucent, about 5 minutes. Remove from heat and transfer to a large bowl.
Add all remaining ingredients to the bowl and mix until thoroughly combined.
Pour into a greased 3-quart casserole dish. Bake for 20-25 minutes or until bubbly. Let stand a few minutes before serving.
