Maple Bacon Cupcakes:
What Cha’ Need:
– 1 recipe Butter Cake (See Below)
– 1 recipe Maple Frosting (See Below)
– 12 cooked Bacon Slices
How You Make It:
1.Prepare Buttercake As Directed
2. Frost each cupcake with Maple Frosting using metal tip 2D. Top each with bacon.
Buttercake Recipe:
What Cha’ Need:
– 1/2 cup softened butter
– 3/4 cup sugar
– 2 large eggs
– 1 1/2 cups all purpose soft wheat flour
– 1 1/2 tsp. baking powder
– 1/2 tsp. salt
– 1/2 cup milk
– 1 tsp. vanilla extract
– Baking cups
How You Make It:
1. Preheat the oven to 350
2. Beat butter and sugar on medium speed, add eggs one at a time.
3. Combine flour, baking powder, and salt, alternating with milk. Beginning and ending with flour beat at a low speed until blended. Stir in vanilla.
4. Place baking cups in pan and spray with veggie spray. Fill 2/3 full with mix.
5. Bake 12-15 minutes. Cool for 10 minutes.
Makes 24 cupcakes
Maple Frosting:
What Cha’ Need:
– 1 cup butter
– 1 16oz package of dark brown sugar
– 1/2 cup evaporated milk
– 1/4 tsp. baking soda
– 1 Tbsp. light corn syrup
– 4 cups powdered sugar
– 2 tsp maple flavoring
How You Make It:
1. Melt butter in a heavy saucepan on medium. Add brown sugar, bring to a boil stirring consistently. Stir in evaporated milk, baking soda, and corn syrup; bring to a boil, stirring occasionally. remove from heat and let cool. Transfer caramel mixture to a large bowl.
2. Gradually add powdered sugar to the mixture; beat at medium speed until creamy. Sir in maple flavoring, beat at high-speed for 2 minutes. Icing firms up quickly so use immediately. Makes 3 cups.
I found the frosting to be way too thick to use a decorator tip with. I only got about 5 cupcakes done with the tip and had to use a spatula to do the rest. This recipe if from Southern Living’s Big Book of Cupcakes. The book is FULL of delicious cupcake recipes, and awesome pictures! This recipe is my favorite so far but I also look forward to making Peaches and Cream Cupcakes and Carmel Apple Cupcakes!

This is an awesome recipe to make for an Outdoor barbecue because it would go really well with barbecued food. I will have to make these. Thanks for such an interesting recipe. I am thinking the bacon makes these cupcakes taste delicious.
