To kick off Minter, I would like to share a delicious peppermint mini bundt cakes recipe and two delicious winter drink creations. I try to keep it simple, so you don’t have to work hard to impress your guests, and I think you will enjoy these easy recipes!
Since the peppermint drink recipes are so simple, we will start with those!
Peppermint Nog:
Ingredients:
International Delight Very Vanilla Nog
Peppermint Extract
Whipped Cream
Candy Canes (crushed)
How To Make It:
Pour a 6-8oz glass of International Delight Very Vanilla Nog
Mix in 1/8 tsp of peppermint extract
Top with whipped cream and crush candy cane
Serve immediately
Peppermint Hot Chocolate:
Ingredients:
International Delight Milk Chocolate Hot Chocolate
Peppermint Extract
Whipped Cream
Peppermint Stir Sticks
How To Make It:
Pour a 6-8oz mug of International Delight Milk Chocolate Hot Chocolate
Mix in 1/8 tsp of peppermint extract
Heat for 45 seconds in the microwave
Top with whipped cream
Add a peppermint stick to the mug
Serve immediately

Ingredients
For Peppermint Nog Mini Bundt Cakes
- 2 Cups All Purpose Flour
- 1/2 Cup Sugar
- 4 tsp Baking Powder
- 1/2 tsp Baking Soda
- 2 Eggs
- 1/2 Cup Olive Oil
- 1 1/4 Cup International Delight Very Vanilla Nog
- 1/4 tsp salt
- 3/4 Cup Peppermint Crunch Baking Chips
For Peppermint Nog Glaze
- 1 Cup Powdered Sugar
- 4-6 Tbsp International Delight Very Vanilla Nog
- 1/4 tsp Peppermint Extract
- Remaining Peppermint Crunch Bark Chips
Instructions
For Peppermint Nog Mini Bundt Cakes
- Preheat oven to 350
- Mix all ingredients in a mixing bowl on med until well combined
- Pour dough into a greased mini bundt pan, filled each cake 1/2 full
- Bake for 20 - 25 minutes (test with a toothpick)
For Peppermint Nog Glaze!
- Mix all ingredients together in a mixer on low (add more nog as needed to thin glaze)
- Pour glaze over warn bundt cakes
- Garnish with remaining peppermint crunch bark
