Low Carb Mini Yogurt Parfaits are a fun and delicious snack or dessert option if you’re trying to limit the sweets this year. Yogurt alone is a great treat, but when you pair it with your favorite low carb cookies, you’re in for a treat.
We have closed out our first week of 2016, and I hope you’re still excited for what this year has in store. We have talked a lot about health in the first week of January and much like you, I plan to keep that theme strong throughout the year both in my home and on this blog.
A few weeks ago I was challenged to 1 Up My Cup, and add a fun mix-in or topper to the already delicious Yoplait® Yogurt. As soon as I read the challenge I knew what had to be done. A few months ago I made my first low carb cookie. I started with a simple butter cookie, and it was fantastic. It was a little more “crumbly” than usual, but I didn’t care. I had a few readers who adjusted the recipe by adding an egg (my readers are some smart cookies!), but I decided to keep the recipe the same. Seeing as how this recipe provided me with naturally crumbling cookies, I knew it was meant to be!
I headed to Walmart to grab some almond flour, butter, and Yoplait® Yogurt and rushed home to see if my famous low carb butter cookies would pass the test. They are so easy to make (I’ll share the recipe below) and with these cookie crumbs and Yoplait® you’ll have all you need to make adorable low carb mini yogurt parfaits. If you don’t care about mini cuteness, you can always toss the crumbs into the yogurt cup and keep trucking.
The thing I love about mini snacks and desserts is that they give you a taste of the sweet life without taking up too much space in your stomach, and they help children learn portion control!
Low Carb Mini Yogurt Parfaits:
Ingredients:
2 C Almond Flour
½ C Stevia
½ Cup Butter (softened)
1 tsp Vanilla Extract
1 tsp Ground Cinnamon
Yoplait® Yogurts (in your favorite flavors)
How You Make It:
Pre-heat the oven to 300
Add all ingredients (except yogurt) in a mixing bowl and mix until cookie dough is formed.
Roll into 16 balls and place on a greased cookie sheet (I use a removable baking mat)
Press dough down with a fork and bake for 18 minutes.
Allow to cool then crumble your cookies.
Open your favorite Yoplait® Yogurt and top with cookie crumbs.

You can get fancy and add cookie crumbs and yogurt to mini parfait cups making low carb mini yogurt parfaits!
It’s hard for me to give you the nutrition info for these because you can choose from so many different varieties of Yoplait® Yogurt, but I will share mine with you as an example.

Carbs: 16g – 2g Fiber = 14 Net Carbs
