Gourmet Pizza Cheats For Busy Moms

My kids love pizza, and I love making them pizza. I didn’t fall in love with pizza until I started my own Pampered Chef business, and got my first pizza stone! My first summer as a consultant, Pampered Chef came out with a grilled pizza cookbook, and I was hooked. I had no idea you could make pizza on the grill, and if there is anything, our family loves it’s grilling. We grill in the Winter, Spring, Summer, and Fall. Now that I have four very active kids, I don’t have as much time to make my favorite grilled pizza recipes from scratch. They say necessity is the mother of invention, which is why I invented a new way to grill the pizza we love in half the time using what I like to call Gourmet Pizza Cheats!

The idea behind these cheats was to figure out a way to get the grilled pizza we have all been craving without sacrificing my limited time in the kitchen. Pizza dough is the most time-consuming part of making pizza from scratch, so I decided to check to check Walmart to see if they offered any solutions. I was basically looking for a pizza dough that was perfect for grilling, when I saw Jack’s Frozen Pizza, which specifically says “Great For Grilling” right on the package! The clouds parted, and the angels were singing (okay, that could be slightly dramatized), and I knew I had to give this pizza a try.

My only concern with using a full-fledged frozen pizza were the questions would it taste good, and how would the tomato sauce taste with my tomato sauce-less grilled pizza recipes? I’ve never been one to back down from a challenge (yes, I challenged myself) so I decided to give this Nestle frozen pizza a try. They were only $2.38, so I couldn’t really pass it up.

I broke out all of my ingredients and fired up the grill  to see what I could come up with. I really wasn’t sure how these would turn out, so I made a Cheeseburger Pizza for the kids, just in case the first two were both #fails. Thankfully, I didn’t need it (it was great, and we ate it, but the other two pizzas actually got way more thumbs-ups from the kiddos).

Grilled-Greek-Pizza-Recipe

The top-rated pizza for this challenge was the Grilled Greek Pizza. I have never made this pizza with a tomato sauce because I’ve always used ricotta cheese as the “sauce,” but WOW, this pizza was ridiculously good. Everyone complained at first because they don’t like it when I make it the usual way (so I usually make a one-person serving), but as soon as they took the first bite, it was cheers all around. Anna (the baby)  made sure to tell me three times how much she liked it, and  Jordan (the oldest) asked if I could make another one. Call me crazy, but nothing feels better than having everyone praise a recipe you make.

Ingredients

  • 1 Jack's Frozen Cheese Pizza
  • 8 tsp. vegetable oil
  • Toppings:
  • 1/2 cup ricotta cheese
  • 1 cup of spinach and kale
  • 1/2 cup crumbled Feta cheese

Instructions

  1. Cook the frozen pizza for 7 minutes at 400 degrees
  2. While cooking wilt spinach and kale in a skillet with oil
  3. Remove Pizza from grill and use a spoon to mix ricotta cheese in with the sauce and cheese already on the pizza
  4. Return to grill for another 7-8 minutes

Chicken-Gouda-Pineapple-Pizza

 

The Grilled Chicken Gouda Pineapple Pizza was another one that I knew would be hit or miss. BBQ sauce and tomato sauce just don’t seem like a great combo, but this was another shocking surprise! We all loved it. I think because I didn’t overdo it on the BBQ, the other ingredients balanced it out. (Click the link above for this recipe)

Grilled-Cheeseburger-PizzaAs I mentioned earlier, I made the Grilled Cheeseburger Pizza, because I knew it was a sure thing. There was nothing the kids could possibly complain about, and they didn’t. It was just seriously over-shadowed by the two other amazing recipes. I think if I made this one alone, they would eat it up, but standing beside the other two, it’s just ‘Eh. I hope you will take a chance and try these recipes for yourself. I would have never thought to use Jack’s Frozen Pizza as a starter for my grilled pizzas, but it grills so well and tastes great. My search for grilling dough is over because after trying these recipes, there is no going back!
