This ends my cream cheese creations for the week! This is an awesome recipe. Surprisingly the little vanilla wafer crust added the perfect flavor and texture for this mini cheesecake tart! This is a super yummy recipe that moms and kids will love!
What Cha’ Need:
– 12 Vanilla Wafers
– 2 Eggs
– 1 Teaspoon Pure Vanilla Extract
– 1 Cup of Sugar
– 2 (8oz) Packages of Cream Cheese
– 1 (21oz) Can of Cherry Pie Filling (or filling of your choice)
How To Make It:
Preheat Oven to 350. Place paper cupcake liners in muffin pan.
Beat cream cheese with a handheld electric mixer until fluffy. Add sugar and vanilla, beating well. Add eggs, 1 at a time, beating well after each addition. Place vanilla wafer, flat side down, in each muffin cup. Spoon cream cheese mixture over wafers. Bake for 20 minutes. Allow tarts to cool completely. Serve with cherry pie filling on top, and top with homemade whipped cream.
