I can’t believe that two weeks from now the kids will head back to school. The summer has flown by once again, but we have enjoyed it. Our albums are overflowing pictures of vacations, family visits, and new experiences. We didn’t waste a minute. With the end of summer comes a fresh excitement. Excitement for the things ahead. There will be new classmates, new class trips, and new teachers. We are all equally excited for what this new school year has to offer.


That’s why we’ve started a new tradition this year. The last two weeks of summer break are now declared Summer Celebration Ice Cream Creation! During the last two weeks of summer, we have so much to celebrate that the only proper way to do this is with our favorite summer treat… ICE CREAM!

It’s not enough just to enjoy ice cream in all of it’s usual awesomeness. Instead, we have to take it to the extreme because, well that’s just who we are! We started off our celebration with a breakfast that I knew would blow the kids minds! Ice Cream Waffles. My kids know that I have been a fan of eating ice cream for breakfast for years, but I have never allowed them to have it. This year that changed!

Want to make this celebratory breakfast yourself? Here’s how you do it:


What You Need:

For Waffles:
2 eggs
1 2/3 cup milk
1/3 cup olive oil
2 cup all-purpose flour
1 Tbsp baking powder
2 Tbsp sugar
1/2 tsp salt
1 tsp vanilla

Optional: Any toppings that match your ice cream (fresh strawberries, blueberries, chocolate chips) – You can also use fruit flavored syrup or chocolate syrup.

For Whipped Cream:
1 Cup Heavy Whipping Cream
2 Tbsp Powdered Sugar (or Stevia)
2 Tbsp Vanilla Extract

Blue Bunny Ice Cream Of Choice (2 scoops each)


How You Make It:


For Waffles:
Mix all ingredients in a bowl and stir until smooth
Use a waffle iron to get the perfect waffle every time
Place waffles on a cooling rack to cool and harden (you want them a little crisp)


For Whipped Cream:

Add sugar and whipping cream in a bowl and beat with an electric mixer until you reach the desired texture.

For Ice Cream Filling:
Choose Blue Bunny ice cream flavor of choice and add two scoops to your waffle.
Top with additional waffle and smash down.




After you’ve made, your sandwiches add the toppings of your choice and enjoy!

Making these kids happy doesn’t take much effort!

Along with our ice cream creations, we make a two-week bucket list that includes anything we want to do before the summer ends. This year we wanted to spend more time with friends, visit the zoo aquarium, and Chuck E Cheese and hit the driving range with our new clubs. So far we are on track to complete everything on our list!


Another new idea I came up with this year was the single serve ice cream cake. The kids aren’t always here together so it’s often easier to have single serve treats that can be eaten when each kid is home. This single serve ice cream cake is so easy to make that even the kids can do it.


What You Need:

Blue Bunny Chocolate Lovers Ice Cream Sandwiches (or variety of choice)
Blue Bunny Vanilla Bean Ice Cream (or flavor of choice)
Sprinkles (or toppings of choice)


How To Make It:

Chill a bowl by placing it in the freezer.
Add two scoops of ice cream to the chilled bowl and stir until it’s the consistency of frosting.
Unwrap a Blue Bunny Chocolate Lovers Ice Cream Sandwich and place it on a lined baking pan.
Spread ice cream over ice cream sandwich and freeze for one hour
Remove from the freezer and add toppings.
