English Muffin Breakfast Pizzas are delicious and you’re kids will love them!

Easy to make english muffin breakfast recipe

This recipe turned out better than expected.

Expectations usually disappointing for me.

Not this morning!

The idea for these pizzas has been brewing in my head since I made the bagel egg bake recipe and finally came together this morning.

I knew I didn’t want to use tomatoes or regular pizza sauce.

I use the Sun-dried Tomato Alfredo on my Hawaiian Chicken Alfredo Pizza I make, so I thought I would try it with this version.

The result was fabulous! Between this and my make-ahead baked oatmeal, the kids are in love with breakfast again!

The English muffins make a nice crisp crust, and the scrambled eggs are creamily dotted with smoky bacon.

Perfection.

These are great for a weekend breakfast, but could also be served for brunch with the company along with our favorite homemade cinnamon rolls.

You can almost always find coupons online for alfredo sauces so be sure to look for one before heading to the store!

English Muffin Breakfast Pizza Recipe:

Ingredients:

  • 4 English Muffins, halved
  • 6 eggs
  • 2 tablespoons milk
  • salt and pepper
  • 4 strips bacon, cooked and chopped
  • 1 cup shredded cheese
  • 1/2 cup Sun-Dried Tomato Alfredo Sauce (Classico brand)

English Muffin Breakfast Pizza Directions:

  1. Preheat oven to 400 degrees.
  2. Half English Muffins with a fork and lay on a baking sheet.
  3. Place the baking sheet in the oven to allow English Muffins to crisp slightly while the eggs are cooking (about 8 minutes).
  4. Meanwhile, cook bacon in the microwave. When done chop and set aside.
  5. In a bowl, beat 6 eggs with 2 tablespoons of milk. Add salt and pepper to taste.
  6. Scramble in a large skillet over medium heat until done. Add in chopped bacon.
  7. Take English Muffins out of the oven and spread 1 tablespoon, Alfredo, on each half.
  8. Evenly distribute the egg mixture on the 8 halves.
  9. Top with the shredded cheese. Bake in the 400-degree oven for 15 minutes, or until tops are golden brown.

As your kids get older, you can print these recipes and add them to a kid-friendly cookbook binder. My boys love helping out by cooking! They would much rather cook than wash the dishes. 😉

Print these recipes and ask the kids to go shopping with you. They can learn to shop for ingredients and put meals together. These are vital skills for the future. Most parents don’t even think about teaching children how to plan a weekly menu, go grocery shopping, and cook the meals.

Teaching life lessons like these don’t just prepare kids for the future, they teach them to respect the time and money that goes into family meals.

While it may not get them to stop eating everything in the house, it will help them appreciate why that annoys us so much!

Can these be made the night before and cooked in the A.M>? or will muffin get soggy and tough?

I'd precook the bacon and eggs and assemble them in the morning.

My grandkids love these! Instead of sauce I use jelly/jam and butter on muffins and follow recipe the rest of the way :)
