My son Jordan is only twelve years old, but he has a serious passion for cooking. About three years ago his grandpa taught him to make potato salad, and he’s been cooking ever since. I can already tell that Jordan is a natural in the kitchen, and I think he may have a future in food services. He’s one of those people that doesn’t need to measure, he just uses his eyes to determine how much of each ingredient is needed. He will make the same dish three or four times and every time it tastes different, but it always tastes delicious! I wish I would have started cooking at his age because I think I would be a much better cook now.
I love that both Jordan’s grandma and grandpa enjoyed cooking and allowed him to help them prepare meals because I’m not sure I would have allowed him in the kitchen as much as he is if they hadn’t discovered his love of cooking.
His all-time favorite dish to prepare is potato salad and this week he decided to add a little kick to it. He asked me to purchase Mezzetta Kalamata Olives. We don’t normally add olives to his potato salad, but he informed me that he’s made potato salad with red wine vinegar and that red wine vinegar is used to pickle eggs, and make a mayo based creamy dressing and for those reasons he just knew they would be the perfect olives to compliment his potato salad. Holy cow, really kid? I didn’t know any of that information!
How can I argue with that reasoning, I think this kid could kick my butt in any kitchen Wars competition!
Jordan made his potato salad, and I have to admit, it was unbelievable as always. He has decided to let me share the recipe with you even though that meant he had to do extra work and measure out the ingredients (you can thank him later).
What You Need:
1 Bag Golden Potatoes (peeled, boiled and mashed)
4 Eggs (boiled and chopped)
1 Cup Mayo
1/4 Cup Relish
1/2 Onion
1/2 Cup Mustard (less if you don’t care for mustard)
1/2 Tbsp Salt
1/2 Tbsp of Pepper
Mezzetta Kalamata Olives
How You Make It:
Boil Eggs (10-12 minutes) and Potatoes (15-25 minutes) in separate pots.
Mash Potatoes and place in a large bowl.
Peel and chop boiled eggs.
Add the remaining ingredients and stir well.
Top each serving with three olives or slice three olives and stir in each serving.
