This Easy Mashed Potato Soup Recipe is one our family has been using for years now. We keep adding it to the menu because it’s easy to make and the kids love it!

Easy Mashed Potato Soup Recipe:

We made this recipe last night, and I really liked it, but more importantly the kids LOVED it! The only thing I will do differently next time is the sour cream. I will not use light; the flavor is too sweet. My husband isn’t a sour cream fan as it is, so I think the regular would be more pleasing to his palate ( I don’t think he would have known I added it if it didn’t have the “sweet” taste of light sour cream).

Easy Mashed Potato Soup Ingredients:

  • 4  baking potatoes (about 2 lb.)
  • 4  slices turkey bacon (crumbled)
  • 4  tablespoons  unsalted butter
  • 1/3  cup  all-purpose flour
  • 4  cups  milk
  • 4  ounces  shredded Monterey Jack
  • Salt and pepper
  • 4  ounces  sour cream
  • 2  tablespoons  green onions

How To Make Easy Mashed Potato Soup:

1. Prick potatoes all over with a fork; microwave on high until cooked through, turning once, 12 to 15 minutes total. Let cool slightly and scoop out flesh, discarding skins. Mash with a fork. In a large skillet, cook bacon until crisp, turning once, about 10 minutes total. Let cool, then crumble.

2. Melt butter in a large saucepan over medium heat. Add flour and whisk until smooth and lightly golden, about 2 minutes. Slowly whisk in milk and cook, whisking, until thickened, 5 to 6 minutes.

3. Stir in cheese, potatoes and 1/2 tsp. Each salt and pepper. Cook, stirring, until cheese melts and soup is heated through. Whisk in sour cream. Check seasoning and add additional salt and pepper if desired. Divide among 6 soup bowls and sprinkle each with bacon and chives.

OMG... I have to try this, I love anything potatoes... defiantly needs to go on my meal plan the next few weeks.... thanks for sharing...

OK. . .I think you've covered my four main food groups here . . . potatoes, bacon, sour cream and cheese. It really looks delicious. Gotta' try it. One of my favorite quick dinners is a microwaved potato with steam veg or veggies, sour cream and a little cheese and bacon crumbled on top. Similar theme -- it's quick, delicious and cheap and even my husband likes it!
