This Carnival Jambalaya recipe is coming to you straight from the heart of New Orleans! I am returning from Mom 2.0 Summit where ZATARAN’S was a sponsor. I would share a Louisiana favorite!

I have a funny story to share with you that I share with everyone when I talk about Mom Summit. I have a few really crazy fears. I know they are crazy, but that’s the thing about fear, even when you know it’s crazy there is nothing you can do to change it, it’s still there, still with you every step of the way.

So in my life, there are three things that I am really afraid of. Frogs, ET, and Cabs. Yes, I am afraid of Taxi cabs. I entire time I visited New Orleans I walked the streets by myself and I never took a cab. I walked alone during the day and at night, and I felt safer than I would have felt if I would have taken a cab. How insane is that? My fear is that I am trapped in a cab, and I can’t get away, but I can run on the street. Right? Yeah, I know. I can out run you, or a gun. It’s insane I know.

Thankfully I survived the weekend, but I am tired.

Carnival Jambalaya Recipe:

Carnival-Jambalaya

Makes 12 (1-cup) servings.

Carnival Jambalaya Ingredients:

5 cups water
1/4 cup oil (optional)
2 packages ZATARAIN’S® Jambalaya Mix, Original
1 pound gluten-free boneless skinless chicken breasts, cubed
1 pound gluten-free smoked sausage, sliced 1/4-inch thick
1/2 cup chopped green onions (optional)

How To Make Carnival Jambalaya:

1. Bring water and oil to boil in large saucepan. Stir in Rice Mixes, chicken, and sausage; return to a boil. Reduce heat to low; cover and simmer 25 minutes or until rice is tender.

2. Remove from heat. Let stand 5 minutes. Sprinkle with green onions before serving.

Tips

Variation: Two cups cubed cooked ham and 1 pound medium shrimp, peeled, deveined and halved crosswise, may be added to rice mixture after 10 minutes of cooking time. Continue as directed.
